Well it is that time of the year again where we decorate the house and wait for the big fat man to come sliding down the chimney.  Or through the front door for most Australians. And what better time than to add this crowd pleasing cob loaf to the menu.

Ingredients

  • Cob Loaf
  • 250g spinach leaves
  • 2 x 125g tin of corn kernels
  • 250 cream cheese
  • 300ml tub of sour cream
  • 40 gram packed of onion soup mix

Method

  1. Cut off the top of the cob loaf and remove all the bread from the inside
  2. Finely chop the spinach leaves
  3. Combine spinach leaves with corn, cream cheese, sour cream and soup mix in a large bowl
  4. Season with salt and pepper to taste
  5. Preheat oven to 180 degrees
  6. Pour mix into the hollowed out cob loaf and replace the top of the cob loaf
  7. Break up the remainder of the inside of the cob loaf and place on a baking tray
  8. Place cob loaf on baking tray
  9. Bake in the oven for 20 mins or until golden brown
